Austrian gastronomy is currently being flooded by a veritable avalanche of costs: energy prices, additional food purchases and delivery problems are leading to a tense situation, and about a third of all gastronomy companies cannot pass on the cost increases. “In the countryside, but also on the outskirts of Vienna, that is not realistic. In the minds of the affected restaurateurs there is a fear of possible emigration of guests,” said Peter Dobcak, president of the Vienna Chamber of Commerce, Gastro, in “Asked” with Gerhard Koller. However, this defensive attitude is wrong, because compared to other countries it shows how cheap it actually is to visit a pub on the outskirts of Vienna “We have to get rid of the fear of the guest,” says Dobcak.
In any case, the sharply increased costs are clearly noticeable in the domestic catering industry, some respond with a reduced supply. Or with dishes that can be prepared with cheaper foods. “We have to reach for the ceiling,” says Dobcak, who understands the financial difficulties of many guests. “It’s a dance on the razor blade that the companies there have to do.” On the one hand, there is enormous cost pressure, but on the other, guests are also financially burdened by the wave of inflation – a difficult situation.
