“It is not easy for us to write these rules …”-This is how the e-mail started that Cornelia and Georg Essig sent to their regular guests on Wednesday evening. “When I looked back in the e -mailinbox on Thursday, there were so many e -mails that I couldn’t even read everyone,” said Cornelia Essig.
She has already retired for three and a half years, but still supports her husband in the “Essigs”, who combines guests with unique culinary delays, top professionals and Cood Cuisine. In the new “Gault & Millau” the kitchen of the restaurant on Niederreithstrasse also received two caps, although Georg Essig had even abandoned the ranking by the lawyer years ago.
“It feels now”
And now should be here. On December 31, Georg and Cornelia Vijn are placed on the plug of the upper gastro address. “My husband said he no longer likes,” she says in an interview with the “Kroon”. For a long time she had to give up her restaurant, “but now it feels good”. The employees were already informed in advance: “It was very difficult for me,” says Cornelia Essig.
What ultimately led to the decision? Different things come together. From the difficult to impossible search for staff, for example in the cleaning area, after terminated in January, due to new collective contracts and higher costs for bureaucratic effort. “We all work on the attack, my husband and I are there seven days a week,” she says.
Talk to possible successors
Since the beginning of 2022, the restaurant has only been officially opened from Tuesday to Friday. In the evening there is always something going on because it is cooked for closed societies. “The cooking course day is with us on Saturday, on Sundays and Monday it will be produced for the grief,” she says. How does the restaurant continue? There are conversations with a possible successor. But nothing has been solved here.
