Industry skeptical from the beginning
“To be able to train a student, the restaurant owners must report and then complete an official assessment. In Upper Austria there is no company that tried to do it,” says landlord Gerold Royda, who was skeptical from the start. The expert sees the problem in the first place in the fact that only a small number of companies question this training.
Opening hours and food supply as a problem
All positions of the vegan and vegetarian cuisine must be treated for the full training of a student. This mainly includes leafy vegetables, flower vegetables, fruit vegetables, root vegetables, the legumes, the fruit varieties and the bush fruits. “Many companies are therefore excluded because of their food supply. In others, the shorter opening hours are the problem,” explains Royda.
