Stephen Hope in the British List

On Tuesday night, we saw four Northern Irish chefs grapple with the first stage of their UK menu, demonstrating their skills with tapas, entrées and seafood dishes, inspired by 100 years of British broadcasting.

Due to some interesting and creative ideas, it was Co Fermanagh’s March Macadam which unfortunately did not move to the next stage.

Since Stephen Hope, Chris McClarg, and Gemma Austin take on plates and desserts for Wednesday night’s episodes, you might be wondering where you can enjoy their talents and experience what they have to offer.

Baguette Lane / Street Kitchen – Marsh Macadam

Although he was the first to leave the competition, Enniskillen man Marty McAdam’s name stands for the highest quality canteen in the heart of Co Fermanagh.

Mars’ passion for cooking and food began when I spent my work experience in school with a local restaurant, Franco, before moving on to the Michelin-starred world when he moved to Edinburgh to work with Tom Kitchen.

Mars opened their downtown street kitchen, which now opens as a brunch and brunch area during the day and turns into a new adventure on Paget Street by night.

Street food serves up dishes inspired by cuisines from all over the world – what they serve is so much more creative than a casual breakfast.

Brunch dishes include Eggs Benedict, Smoothie Cups, and Croc Moncier. Lunch will be followed by a leg-length hot dog with crunchy crackers, ham crackers, cod tacos, and many more.

Paget Lane, open on Saturdays, boasts a 15-course tasting menu and wine pairings in one sitting.

The restaurant is by reservation only and the menu clearly focuses on modern Irish cuisine served in a unique and quiet setting.

Dawson’s – Stephen Hope



Dawson Meals by Castledowson

Belfast-born chef Stephen Hope began his career at the Merchant Hotel, previously working as a sauce chef before moving to Michael Dean’s 1* Deans Restaurant.

He is the proud owner of Dawnsons, a casual little restaurant in Castledawson, and intends to intensify his love of fire dishes by opening a grill in the near future.

Stephen joined the Gordon Rams Scholarship with 500 other 1st place candidates and has since trained at several Ramsay restaurants around the world.

Dawson offers a variety of “Contemporary Irish Cuisine” at Co Derry, with reviews delighting with the quality of the food, great ambiance and welcoming staff.

Stephen is fighting tonight to reveal his homemade and sweet talents that he has completed for Dawson.

Strange Tea – Gemma Austin

After last year’s competition, Carryduff chef Gemma Austin is back in the UK’s menu kitchen.

Gemma worked at the Fitzwilliam Hotel in Belfast (5* hotel), where she became head of the pastry department, before moving to the luxurious Old Inn, Crawfordsburn (4* hotel), where she worked in all departments and eventually became a sauce cook.

His new venture, A Peculiar Tea, was created on University Road Belfast, as a “refuge from the realities and stresses of adult life”.

Gemma loves to charm children’s imaginations and uses food to make her guests feel nostalgic and cheerful.

A Peculiar Tea offers a six-course tasting menu that must be changed every eight weeks or so to provide the canteens with the best seasonal food and afternoon tea, with a variety of great themes to delight the canteens.

The current tasting menu is inspired by the classic board game Cluedo.

Paul Ainsworth b. 6 – Chris McClarg

Chef Chris McClarg is back on the UK menu also starving to prove he has what it takes to get to the banquet.

Although Chris made England his home, he couldn’t imagine representing an area other than GBM’s kitchen in Northern Ireland.

Unfortunately, Chris lives and works in Padstow, so Northern Ireland fans can only experience his creations if they are resting on the water.

Chris is proud to have worked with veteran chef Paul Ainsworth for over 10 years and is now at Chef de Cuisine No. 6, a Michelin-starred restaurant located in the heart of beautiful Georgian Padstow, serving modern British cuisine. Prepared local food. Corn based products.
