Rising energy costs and staff shortages force the company into action. “Because we are constantly understaffed, we need to introduce more days off,” says master pastry chef Hubert Rudiferia. “That way we can relieve our existing team a bit, because we don’t want to lose them.” The operator is still looking for employees, especially interns. “Everyone is the same in our industry right now. But it’s a shame about the craft. A baker or confectioner must not become extinct.”
Energy costs also play a role. “We are now closed on Mondays and Tuesdays, so everything is shut down and therefore also save on electricity costs in this difficult time,” says the entrepreneur.
