„krone“: Mrs. Vitzthum-Maier, you have increased the prices for your schnitzel specialties considerably. Why?
Mrs. Vitzthum-Maier: We pay more salary than the collective labor agreement. We had to do that, otherwise the few employees will walk away from us. The Wiener of pork with a side dish costs 12.60 euros. That was increased by 1.50 euros, just like our brewer’s schnitzel, a kind of cordon bleu baked in our own beer batter, which has cost 15.60 euros since September.
What about the beer prices?
Due to higher raw material prices, we had to increase this by eight percent.
What is the impact of energy costs?
We still have contracts under the old conditions, but next year it will be exciting. We bear part of the costs, we do not want to alienate our guests from us.
What annoys you the most and what is your reaction to the skyrocketing wholesale prices?
We finally had a store again and then the dealers suddenly started rationing. We now buy from local farmers. They are not as outrageous as the companies. For example, we get the clarified butter from a small cheese factory. The farmer delivers the oil immediately, even with a price guarantee. This allows us to catch some things.
