The process for this is called “transesterification”. Sorry, it has to get a bit chemical now: “Esters” are made by splitting water from acids and alcohols. As is known, among the so-called fatty acids there are good and less good ones for health, that does not matter to us here, it is not about food. The esters of fatty acids together with the alcohol glycerine form the fats. Everything from the delicious almond oil to the not so beautiful but very popular lard. So from liquid to “greasy”. The difference is made by the different fatty acids (there are many) – the alcohol is always the same, glycerin.
