There is already a rumor in restaurant circles: the price increase in combination with the doubling of the goose price would cause the cost price per portion to rise exorbitantly this year. What does Austrian gastronomy spokesman Mario Pulker say about whether the popular martini goose is still on the menu this year, and why some innkeepers are suddenly considering closing completely over the winter.

Local restaurateurs have barely recovered from the effects of the pandemic before facing the next dilemma: the price for the goose is twice as high this year as the crisis-hit year before. In addition, the hosts have to charge much more for the popular but very energy-intensive dish. The price increase of other ingredients then completes the price for the “golden goose”.
