A visit to a pastry shop, that’s the difference with the two euro bunny

A chocolate Easter bunny like any other? You won’t find that at Confiserie Eibensteiner. Everything is handmade, the figures are not hollow.

Whether for children or adults, the chocolate bunny is part of Easter and has a permanent place in most nests. The “Krone” visited the Eibensteiner Confiserie in Hernals during Holy Week and was able to look over the shoulders of the pastry chefs. A total of five trainees are currently following their training at the location. One of them is Linda Schörg, who will be Vienna’s first chocolatier after her final exams in the autumn.

Completely new training
Because this course has only been around for three years. “The new training course to become a chocolatier guarantees attractive job opportunities. These young skilled workers are urgently needed and thanks to the attractiveness of the job profile, there is now a significantly higher influx,” says Maria Elisabeth Smodics-Neumann, WKW department chair for crafts and trade. Linda Schörg loves her work and hasn’t had enough of chocolate: “I also like sweets at home.”

Combating the shortage of skilled workers with education
“Due to the shortage of trained personnel, we cannot avoid training our employees ourselves,” says director Gerald Kontriner. What makes matters worse is that the sector is very cost intensive. “The machines are expensive,” says Kontriner. A lot is done by hand anyway. Like the chocolate Easter bunnies for example. The quality cannot be compared to that of supermarket items. In addition to the significantly higher price, there is another difference: while the chocolate bunnies are usually hollow on the inside, the bunnies from Confiserie Eibensteiner are filled with the finest nougat. Connoisseurs have to pay no less than 10.90 euros for a rabbit (115 g).

Two chocolate bunnies per person
The “Krone” was in the branch at Währinger Straße 135. A few days before Easter there is a lot to do in the beautiful store. What are the bestsellers? “A colorful mix, but of course the chocolate Easter bunnies,” says the saleswoman. This trend is also reflected in the balance sheet of the Vienna World Cup: an average of two Easter bunnies are given away per person. Enjoy your meal!
