Frieda Bichler from the Stöfflhütte on the Wilder Kaiser can confidently be called the “Kaspressknödel Empress” to describe. Far The 83-year-old Tyrolean has cooked more than 100,000 cheese dumplings. It’s not over yet – even though she hasn’t liked her dumplings for a long time.
90 eggs. 2.5 kilos of onions. And of course the most important thing: 8 kilos of cheese. “Kaspressknödel empress” Frieda Bichler can no longer extract details from the recipe for the Kaspressknödel, which she has been serving for 30 years in the Stöfflhütte above the Hintersteiner See in Scheffau. Exactly this: “I’ve always done it this way.”
The 83-year-old senior landlady no longer needs a prescription. Two to three times a week she prepares the dough for about 160 dumplings. In a laundry basket so there is room for it. Only the strenuous kneading of the dough is now done by son Peter Bichler. He was also the reason why Frieda switched from farmer to hut owner 30 years ago. “That was my dream,” says Peter. “We started with beer and dumplings,” remembers his mother, who everyone in the Stöfflhütte calls “Grandma”.
Cheese dumplings on salad and in soup are a hit
The menu has now grown considerably. “Grandma Frieda’s cheese dumplings” are definitely indispensable. Only the cook herself does not like her specialty soup or salad and only tastes the dough. “I can’t see her anymore,” the 83-year-old waves her head, shaking her head. It’s almost as if Frieda Bichler can’t understand what’s so special about her handmade pressed dumplings. However, the taste test convinced us immediately.
No wonder that guests flock to the Stöfflhütte to enjoy the dumplings. On nice weekends it can be busy on the terrace, which can accommodate about 100 people. Then all hands are needed.
Of course, Grandma Frieda also helps. “Last Sunday she washed the dishes for six hours without a break,” we are told in the kitchen. Right now, the 83-year-old is busy around the sink again – she can’t help it. When asked if retirement is something for her, she just laughs: “Well, I don’t have time for that!”
