More and more people want to know where the food comes from on their plate. Politicians cannot continue to a catering marking in gastronomy. Initiatives are all the more important than those of Möbel Giant XXXLUTZ, who now depend on absolute transparency in his restaurants.
Until now, the “identification of origin” on the menu was considered a distinctive feature of the luxury gastronomy. Because only those who use high quality products will declare them confidently and provide information about where they are obtained.
The fact that a large “system catering” of all people is now voluntary – because so far neither industry nor politics have been able to make a mandatory labeling in restaurants – ensures the highest possible transparency, can certainly be celebrated as a welcome phase victory.
Our farmers can cheer
With 47 locations throughout the country and tens of thousands of guests a day, the restaurants of the successful design Gigant are an invaluable lever for our domestic agriculture. Because 90 percent of the food used comes from Austria. For meat, milk, butter and eggs, their own collaborations with household companies were also discussed.
Red-white-red pioneering role
The “Kroon” has often achieved the importance of a legal marking point on this subject. So far this has only been implemented in the community catering, for example in company canteens or hospitals – and unfortunately it is unfortunately only half heartily. But instead of promoting the general implementation for more transparency on the record and therefore supporting the domestic farmers, those responsible people like to wake up. “Too much bureaucracy” or “then everything will become even more expensive” are the standard sentences that are happy to be raised. Now a furniture store determines how it can be.
“We have introduced the identification of the origin out of conviction. We enable our guests to make the conscious decision about the origin and production conditions of their dishes. This label is possible everywhere- also in system catering,” says Andreas Holderer, director of XXXLUTZ Catering after years of intensive preparation for this step.
In the future, every guest will also have the choice to consciously choose animal welfare products, “Krone” Animal Corner Leader Maggie Duckfellner is particularly satisfied. Because with “Hütthaler Hofkultur” as a meat supplier is also animal protection on the menu – from the stable to the plate. The animals grow up in agriculture with more spout, straw litter, species -suitable food and without painful interventions. The transports are short, instead of mass, the dignity of the living is counted in the court culture.
Positive energy in the shed
One of the 36 partner companies is the Hof van de Gaspermir family in Pettenbach. The fact that his new pig styer was not conventional, but based on animal welfare standards is not only a clear improvement for the animals, but also for farmers themselves: “I go to the stable every day when I see how curious, cheerful and playful our animals are,” says farmer Claudia Gaspermir. You can feel your passion and joy for your company. The three children are also enthusiastic, forgive names and even bring their favorites “treats”.
Strong together
The signs of the time are clear: the consumer demands this information and politics must do everything possible to ensure that the added value of the countryside remains in their own country. But apparently private impulses are needed to control this Hercules task.
Co -developer and founder of the association “Land Creates Life” Hannes Royer describes the initiative as directional: “A large -scale characteristics of origin is an important step – away from anonimity, to freedom of choice. Because in this way customers of the catering trade can deliberately help form tomorrow.”
Do you know where the schnitzel comes from in the tavern? Or the eggs in the Kaiserschmarkn on the hut? No. It is often advertised with Austria, but there are food from all over the world on the board. Although the topics of origin and regionality in the top gastronomy are already well received, you usually only get anonymity in width.
The most important argument is “not implementable”, which is being fought in the catering marking in the catering brand. But now there are no more apologies. 100 percent transparency does not necessarily mean 100 percent Austria.
